unBearablyGood: Paleo Pumpkin Pancakes!

 Ok after a LONG break from blogging, I am back! A lot of s*#@ has happened since my last post and I got really distracted….But for the love of food, I finally have something to say again. It started with my quest for a really good gluten/ dairy free pancake. I have been trying to make these for awhile now and usually they turn out like pumpkin scrambled eggs : (  I have been leaning towards a diet with less grains and less processed food overall, so I’ve been hesitant to use any in my pancakes.  I finally broke down and looked for a recipe online. This one calls for coconut flour, which isn’t really a grain at all,  but still a flour and therefore, a processed food. But I really wanted some pancakes! Processed be damned, it worked. The thing I love about this recipe is it is EASY and fast. I don’t want to spend hours in the kitchen first thing in the morning! I topped my ‘cakes with a sauce made of bananas and coconut milk, a little raw honey and sunflower butter. Y.U.M.

And P.S.
I did not use the honey or baking soda called for in the recipe, because that’s how I roll…
